I was searching for hymns, prayers or glorifications to Kali-Durga Ma, and I found that in many cases the same text - for example the Devi Kavach - is uploaded in at least three different versions. I mean, the texts are basically the same, but some words or even lines are totally different. How do you decide which one is the correct version? Since I do not speak Sanskrit or Hindi I cannot decide if a certain word is misprinted/mistyped or not, and I do not want to recite the texts in an improper way.

If I understand your post right, then only a ITRANS or IAST transliteration will fulfill your requirements. All what is just romanized is not reliable.
