Namasté,

Yamuna Devi's Lord Krishna's Cuisine: The Art of Indian Vegetarian Cooking is sublime. Many public libraries carry it, and besides being full of delicious recipes, the book teaches you how to work with different ingredients and spices so that you can understand how to make vegetables, pulses, and grains tasty and be creative with them. At 816 pages, it's hefty and seems a little daunting, and there is a shorter version out called The Best of Lord Krishna's Cuisine (242 pages) that might be an easier place to start.

I also highly recommend Soei Yoneda's Zen Vegetarian Cooking (which was originally published as Good Food from a Japanese Temple, so it might be available by either title) for simple, beautiful, and nutritious food, as well as more ways to cook rice than you ever imagined. Finally, there's Joanne Stepaniak's Vegan Deli; the dishes from this book turn out so well that my non-vegetarian friends ask for the recipes.

I saw this book on amazon and put it on my wishlist. I have not bought it yet, so I can't give a review, but it looks interesting:

Namaste Divine Kala,

I second Indraneela's suggestion of Lord Krishna's Cuisine. We have the long one and it is filled with many different recipes as well as great instructions and tips.

Hari Om!

Two of my favorites:

Shree Maa's favorite recipes collected by devotees - www.shreemaa.org (http://www.shreemaa.org) - online store link is on the right hand column.

Monks Cookbook - www.minimela.com (http://www.minimela.com) - From the monks of the Himalayan Academy. Some of the recipes use onions/garlic/hing, but not all of them.

Om Namah Sivaya!

A lot of my friends enjoy the Post Punk Kitchen

... I usually just make stuff without the meat. For example... Spaghetti + sauce - meat = vegetarian spaghetti! ;)

This one of my favorite things... ever... and has been for years -

Most Wal-Mart/Target/etc have it in their "ethnic" section (or whatever tacky label your store may use). As far as I know, it's completely Vegan with the exception of the picture on the box.

It comes in blocks that dissolve in boiling water. Then you cook on low heat to thicken it. You can serve it as a sauce over rice by itself or add vegetables like sweet potatoes.
