It is my experience that onions and garlic excite the senses, something one on the path would not necessarily want to do while following a path prescribed by guru. Our senses keep us tied to the world of maya and guru in my opinion tends to lead one away from such and towards enlightenment. Perhaps this is not your goal however.
As far as carrots, I have no clue as have never heard of such a thing.

Dear Samrat,
Namaste..the reason onion,garlic,carrots,potatoes or any tuber is not allowed is because when we harvest these vegetables/plants the whole plant dies.
But in cases like tomatoes ,fruits etc one plucks the veg/fruit and the whole plant does not die.
That is why we hear that those who used to be Sanyasis living in the jungle only live eating fruits and vegetables they pluck..its just trying to minimize the loss of live of a plant.

Someone who is supposed to be developing brahminical qualities should not eat onion/garlic. This is stated in the Manu smriti 5.5:

"Garlic, leeks and onions, mushrooms and (all plants), springing from impure (substances), are unfit to be eaten by twice-born men."
Here "twice-born" means people with brahminical qualities. One who has taken diksha is supposed to be developing brahminical qualities!
There are no restrictions for carrots. Carrots can be eaten.

Anything in general, that grows in earth have predominantly tamas guNa. Hence they are not advised for those who wish to walk on spiritual path. However there are certain roots used as herbs and they are taken in small quantities as a medicine and not as a daily routine diet.
However, for those who are engaged in physical activity, onions and garlic, etc are necessary as they give physical strength.
Fruits grow in air and it is said that they contain sattva guNa as predominant guNa. Hence fruits are recommended by all.

Onion garlic and carrot grown under without sun light. They excite the sensory system. It is the diet of godly Brahmins when supreme soul shiv comes to earth to create paradise on earth. The three murthies are important players. they suppose to be most fallen human being on earth because they are first creation. And supreme sous make them equal to god. This story is scripture maninly hindu scripture but also all mythical and videshi scripture too. The problem is those scriptures are written by people who has semi memory and those who are rishi muni( lower gods or asura that we don't worship in india. By following those shudra Bharath become narak. And whole world become a bhakti cult and at this time supreme soul arrives in India and teach raja yoga.

I have never heard anything about carrots, though.
