Why is Ganesh often depicted with the Vishnu tikla instead of that of Shiva? My understanding is that he is the Son of Shiva, so why would he worship Vishnu?

Ganesha is concieved of in both ways - you can see both kinds of Tilakas based on the people who worship him. Most in Southern part of India view Ganesha as the son of Shiva, and hence he is viewed as a Shaivite! In the north, you can see both varieties of Ganesha.
In Brahmavaivarta Purana, Ganesha has been considered to be an incarnation of Krishna, so those who follow the authority of this purana over others, view Ganesha as non different from Krishna, and hence view him as Vaishnavite. And all other pure Vaishnavas who worship Ganesha( if at all) definitely use the Vishnu Tilaka.
Is Ganesha really Shaivite or Vaishnavite? I guess he would not mind being classified in either of them - that is purely our perspective.

In the following image you can see Shri Maha-Lakshmi,consort of Lord Vishnu, and Lord Ganesha.It is interesting to note that the elephants are considered the servants of Shri Lakshmi.However I don't know who is considered the higher deity in such picture.

In the following image you can see that Ganesha is worshipping a linga.
Linga is the sacred symbol of Lord Shiva.
