Applying Ayurvedic Principles to International Cuisines

    Namaste

It is my observation that Western food tends towards accentuating the flavor of the vegetables with herbs and spices.

Whereas Indian food tends towards using the vegetables, etc. to deliver in various textures combinations of spices giving rise to subtle complexities and sharp contrasts.

No doubt, Indian food and spices are delicious, but my digestive system seems to function better with Western food.

I was raised around a great deal of Italian and Mexican food, and I would like to be able to prepare dishes from these traditions according to Ayurvedic principles.

how can the principles of Ayurveda be applied to cooking in general, including Western/International food?

Vannakkam: There are quite a few recipes and/or sites doing what you say. Here's one. http://franlife.blogspot.ca/search/label/Breakfast

I also think most western healthy vegetarian stuff is most likely practically in line with ayurveda already, whether acknowledged or not.
