  1. Track my progress towards vegetarianism and overall health

I've only written one post, but it basically explains everything. My next post will be this evening, when I'm done eating and drinking for the day. I will just list all the things I have consumed. I'm keeping track of what I eat/drink and what time, as well as how much.

I hope that if I can get some readers, it will give me incentive to actually stick to this.

Good luck SiL. AFAIK, vegetarian food available in US restaurants is low in variety, right? In a restaurant, one gets grilled sandwich, salad, bread. That is it?

If you find yourself too attached to the taste of meat and it is difficult to give up, you should consider visiting a slaughterhouse. Watch the entire process. We are so distanced from the actual killing that we feel no remorse at eating flesh. You could also watch PETA's videos http://www.youtube.com/user/officialpeta/videos

Add Fat, Sick and Nearly Dead to your documentary list.

Vannakkam: It's getting better. Some of the larger burger chains have vegi-burgers, and if you look there are some excellent vegetarian restaurants around. The website HappyCow keeps track of them. http://www.happycow.net/

I'll give one caveat that I discovered in going veg, especially eating out... be especially vigilant that you do not fill up on starchy carbs. I did that and I blew up. Carb sources (pasta, rice, potatoes) are plentiful and cheap for restaurants to serve. My local diner/restaurant serves veggie burgers, but with a huge side of fries. The smart diner (like me ) asks for them to be replaced with the vegetable(s) of the day. Though it's bad enough the bun is white bread. Meh, compromises.

Last night I went to said local diner/restaurant. I ordered eggplant parm, which came with what appeared to be 1/2 lb of pasta in a separate bowl. I ate half the eggplant parm, and maybe a bit more than a cup of the pasta, and took the rest home. The pasta will get portioned out into 1 cup servings (per Weight Watchers guidelines), with vegetables and some kind of interesting legume. The eggplant itself will go on whole/multi-grain bread, with perhaps some more cheese, of the low fat veg.-friendly kind.

    Be vigilant!

You are very brave and my hat is off to you. I used to eat tons of burgers and steaks and pork, it is difficult not to in my American culture. I have eliminated all cow and pork but am trying to wean myself off of Chicken, eggs, and seafood. Considering I considered myself a "meatatarian" previously I believe my progress is ok, but still am not brave enough to stop eating chicken. However, I am beginning to notice that after eating primarily vegetables and fruits for the past 40 days I am beginning to dislike the chicken taste and crave veggies, so it appears it does get easier.

Please keep us aware of your progress and do not get discouraged if you slip up a few times. The fact that you are making such a Herculean effort is inspiring.
